Kavalan was founded in 2005 in Yilan County, on the northeastern tip of Taiwan, by the King Car Group. The distillery sits at the foot of the Snow Mountain range, with access to pure mountain spring water. Taiwan's subtropical climate — hot, humid summers and cool winters — accelerates maturation dramatically, with the 'angel's share' running at 10–15% per year compared to 2% in Scotland.
Distilled in Scottish-style copper pot stills and matured in Portuguese wine (Vinho Verde) casks. The extreme Taiwanese climate means the spirit interacts with the wood far more aggressively than in cooler climates, extracting colour, flavour, and complexity at an accelerated rate. Bottled at cask strength without chill-filtration.

In a 2010 blind tasting held in Edinburgh — the heartland of Scotch whisky — Kavalan's whisky beat several established Scottish single malts. The result caused considerable controversy and put Taiwanese whisky firmly on the global map.
